The Level II Award in Food Safety in Catering (QCF) is a qualification required by all interior staff working or preparing to work on the Superyachts.

This course will ensure that persons who are or will be handling food, are provided with the knowledge and skills necessary to produce safe food.

The Level II Award in Food Safety in Catering has been developed and is awarded by Highfield Qualifications and sits on the Regulated Qualifications Framework (RQF). The RQF is a qualification framework regulated by OFQUAL.

The Highfield Level II Award in Food Safety in Catering is recognised by the MCA.

The Food Safety & Hygiene Training Course Level 2

This one-day food and safety level two course is a requirement for all food handlers, who are planning on working as interior crew on Super Yachts. This includes the positions of stewardesses / stewards, chefs and all catering staff and the course is designed to provide individuals with the knowledge of how to safely and hygienically store, handle, cook and serve meals on-board.

Under the British Maritime Labour Convention (MLC 2006), all Ships Cooks, catering staff, and others processing food in the galley are required to be suitably qualified in Food Hygiene or Food Safety in Catering.

The aim of this award is to provide individuals with knowledge of the basic food safety practices, the hazards and risks to food safety presented by food operations and personnel, together with cost effective, practical control measures. Learners gaining this Award will know that food safety is the responsibility of everyone involved in the storage, preparation, cooking, service and handling of food

A Food Safety & Hygiene Level 2 certificate is issued to those students who attend our Food and Safety Hygiene Level 2 course which falls in line with the following regulations: Maritime Labour Convention, 2006:

• This course is certified by Award in Food Safety in Catering 2 BSC British Safety Council. Annex 1 of MSN 1846 (M).
• All these qualifications are classroom based followed by an assessment
• Level 2 is the minimum acceptable level for catering staff and persons processing food and maintaining the health in the galley
• Certificate is issued by an awarded body that is MCA approved

SAMSA Category C up to 9m (no sea hours)

The course will be conducted over 7 days starting on a Monday in the Waterfront and we aim to ensure enough hours on board at sea are achieved and there is a day for SAMSA Short Range radio certificate.

Course Content

Day 1: Introduction and communication of what is required including examination preparation.

• General Legal Requirements
• Nautical Terms, Vessel construction, Equipment and General Seamanship

Day 2: Motors

• Safety and Emergency
• Rule of the Road (Colregs) and distress signals
• Marine environment, weather, currents and pollution

Day 3: Radio and Penguin procedure

• Elementary 1^staid
• Practical orientation of small vessels. Pre-launch and launch procedures. 6 hrs at sea.  Haul out and flushing procedures

Day 4: Navigation and chart work

• Launch and complete Man Over Board procedures. 6 hrs at sea.  Haul out and flushing procedures

Day 5: Early Launch 8 hrs at sea

Day 6: Early launch 5 hours at sea. Theory and practical exam.

Day 7: SAMSA SRC

SAMSA Category C up to 9m (with 25 sea hours already acquired)

The course will be conducted over 8 days in order to ensure sufficient hours on board at sea are achieved and an alternate day for SAMSA Short Range radio certificate.

Day 3: Practical orientation of small vessels. Pre-launch and launch procedures. Launch and complete Man Overboard procedures, haul out and flushing procedures

Day 4: Radio and Penguin procedure, Elementary 1^st aid, Navigation and chart work.

Course Description

This course is conducted over 13 days in order to ensure sufficient miles on board at sea are achieved and 1 day set aside for the mandatory SAMSA VHF Radio Certificate.
During this course students will learn the principles of boat handling, rules of the road, sailing, crewing, navigation and watch keeping. You will also learn rope work, knots, rigging, maintenance and seamanship skills.

After successful completion of the SAS Day Skipper course you will be able to operate a sail or power vessel under 24m at sea from sunrise to sunset. Local waters are defined as 15 nautical miles from the skippers home port, or 25 miles from their home port provided they are no more than 15 nautical miles from an approved safe haven. This licence will be recognised for use in South African waters.

A South African national or a South African resident with a valid South African ID document may apply for an International Certificate of Competence (ICC) should they require this licence for use in International waters.

Course Description

The SRC (short range certificate) course is for anyone who wishes to use a fixed or handheld marine VHF radio

A radio is an important piece of safety equipment on board, and it is vital to understand the correct procedures. The SAMSA SRC / VHF Radio Course is vital and goes hand in hand with courses like Powerboat Level II and Day Skipper. VHF also become a requirement when pursuing more advanced courses like Yachtmaster.

The SAMSA SRC / VHF Radio course covers the basics of radio operation, the correct frequencies (channels) to be used. Distress, emergency and medical assistance procedures, making ship to shore telephone calls. This includes both fixed and hand-held equipment using international channels.

This licence is recognised for use locally in South Africa and Internationally.

The short-range certificate is the minimum qualification required by law to control the operation of VHF and VHF Digital Selective Calling (DSC) equipment.

For offshore work such as working on oil rigs, you will need to complete the 11 Day STCW 10 course which includes first Aid At Sea, marine firefighting, personal safety and social responsibility, personal survival techniques and proficiency in designated security duties

Course Description

The course completion certificate is a PREREQUISITE for booking the RYA/MCA Yachtmaster Ocean oral examination, unless candidates are prepared to take a written examination as well as the oral. Candidates must also have an ocean passage as skipper or mate.
The candidate must provide the examiner with:

• A narrative account of the planning and execution of the qualifying passage
• Navigational records, completed on board a yacht on passages, out of sight of land showing that the candidate has navigated the yacht without the use of electronic navigational aids.

The records must include as a minimum: planning, reduction and plotting of a sun run meridian altitude sight and a compass check carried out using the bearing of the sun, moon, a star or planet.

During the oral test the candidate may be required to answer questions on all aspects of ocean passage making in a yacht, including passage planning, astro navigation, worldwide meteorology, crew management and yacht preparation, maintenance and repairs.

If you need a Yachtmaster Ocean Certificate of Competence in order to work on board a commercial craft subject to the MCA’s codes of practice, you will need to get it commercially endorsed.

The Yachtmaster Ocean Certificate of Competence can be used commercially in its own right. It is also a pre-requisite for the MCA’s Chief Mate, Master 500 and Master 3000 qualifications.
